Why Cottage Cheese Works So Well in High Protein Ice Cream
If you’ve never used cottage cheese in a dessert before, you’re in for a surprise. It’s one of the most versatile ingredients in high protein recipes – especially for ice cream.
1. High in Protein
Cottage cheese is rich in casein, a slow-digesting protein that helps keep you feeling full and supports muscle recovery. Paired with the over 32 g of protein per serve in the Enlighten Me Shake, this dessert provides an impressive protein hit in every scoop.
2. Naturally Creamy
When blended, cottage cheese transforms into a smooth, velvety base that mimics traditional ice cream – no cream required. It gives you that indulgent texture without added sugar or saturated fat.
3. Nutrient Dense and Gut Friendly
Cottage cheese also provides calcium, phosphorus and B vitamins for bone and energy support. When combined with the Enlighten Me Shake’s probiotics, prebiotics and digestive enzymes, it creates a gut-friendly frozen treat that’s as good for your body as it tastes.
Recipe: High Protein Chocolate Ice Cream
Ingredients
- 2 scoops Enlighten Me Chocolate Meal Replacement Shake
- ¾ cup cottage cheese
- 3 tbsp milk of your choice
- 1 heaped tbsp raw cacao powder
- 1 tbsp raw honey
- ½ tsp monk fruit powder
- 2 tbsp natural nut butter of your choice
Method
- Blend all ingredients, except the nut butter, until smooth.
- Pour half the mixture into a glass container. Add 1 tbsp nut butter and drizzle over the surface. Pour the remaining mixture on top and repeat with the final tablespoon of nut butter.
- Cover the surface with cling wrap to prevent the texture from becoming icy.
- Freeze for 3–4 hours, then enjoy!
Bow’s Tips:
- If you prefer a sweeter dessert, add 2 tbsp raw honey instead of one.
- If frozen overnight, allow to defrost for 20–30 minutes before serving for a soft, scoopable texture.
Nutrition Highlights (per serve – approx.)
- Protein: High, from the shake and cottage cheese
- Carbohydrates: Moderate, primarily from honey and nut butter
- Healthy fats: From natural nut butter
