We asked our Nutritionist Bow to reimagine the humble pancake. Her goal was to create a recipe that delivered balanced nutrition without compromising on flavour or texture.
The result is a protein-rich, slightly nutty and incredibly satisfying pancake, powered by our Enlighten Me Shake in Vanilla flavour and nutrient-dense hazelnut flour.

Enlighten Me High Protein Pancakes
Per Serve: 32.5g of protein
Ingredients (1 serve):
- 1 scoop Enlighten Me Vanilla Shake
- 1/3 cup hazelnut flour
- 1/2 ripe banana
- 1 egg
- 1 teaspoon raw honey or maple syrup
- 2 tablespoons Greek yoghurt
- 1/3 teaspoon cinnamon powder
- 1 tablespoon water
How to make:
- Mash banana until smooth. Add egg, honey, yoghurt and water.
- Stir in dry ingredients: Enlighten Me Shake, hazelnut flour and cinnamon.
- Cook in a lightly oiled pan (use extra virgin olive oil) until golden.
