Cosy Up with This Easy, No-Bake Chocolate Brownie Recipe

There’s something deeply comforting about chocolate in winter β€” especially when it comes in the form of a soft, rich brownie that not only satisfies your cravings but also supports your health.

ThisΒ no-bakeΒ chocolate brownie is a nourishing twist on a classic favourite. Made with wholefood ingredients like dates, seeds and almond flour, and boosted with the Enlighten Me Shakes in Chocolate flavour, it’s a high-protein, gut-friendly snack that tastes indulgent but fuels your body.

We believe it’s important not to see chocolate as a β€˜bad’ food or cut it out entirely. Instead, recipes like this allow you to enjoy the flavour and comfort of chocolate without the guilt β€” while nourishing your body with the goodness of raw cacao. Raw cacao is rich in magnesium (important for muscle function and relaxation), iron (supporting energy levels), antioxidants (fighting oxidative stress), and mood-boosting compounds like phenylethylamine and theobromine.

Ingredients

  • 2 scoopsΒ the Enlighten Me ShakesΒ (Chocolate flavour)
  • Β½ cupΒ almond flourΒ (or pumpkin seed flour)
  • 2 tbspΒ raw cacao
  • Β½ cupΒ dates, soaked in boiling water for 5 mins then blended into a purΓ©e (use just enough water to cover the dates)
  • 1 tbspΒ desiccated coconutΒ (plus 1 tsp extra for topping)
  • Β½ cupΒ roasted seedsΒ (a mix of sunflower, sesame and pumpkin seeds works well)


Method

  1. In a bowl, combine all the dry ingredients: almond flour, the Enlighten Me Shakes in Chocolate flavour, raw cacao and desiccated coconut. Mix well.
  2. Add the date purΓ©e and mix until well combined. If the mixture feels too dry, add 1–2 tbsp of water.
  3. Stir in the roasted seeds. Taste and, if desired, add a natural sweetener such as monk fruit, stevia, honey or maple syrup.
  4. Line a square or rectangular container with clingwrap, allowing some overhang. Press the mixture into the container and fatten to about 1 cm thick. Optional: sprinkle with rose petals and the remaining desiccated coconut.
  5. Cover and freeze for 1 hour. Once firm, cut into pieces and store in the fridge.
