Icy Protein Bites Recipe

This recipe makes 4 icy protein bites.

Ingredients

  • 1 scoop Enlighten Me Vanilla Flavour

  • 1 medium banana

  • 2 tbsp hemp seeds

  • 1 tbsp almond butter

  • 2 tbsp soy milk (or any milk of your choice)

  • 1 tbsp cacao powder

  • 1 tbsp cacao nibs

Optional toppings:
Desiccated coconut, pumpkin seeds, pomegranate, or any fruit and seeds of your choice.

Method

  1. In a bowl, mash the ripe banana. Add the Vanilla Enlighten Me Meal Replacement Shake, almond butter, hemp seeds and soy milk. Combine well with a spoon.

  2. Spoon half of the mixture into two silicone moulds. This will be the vanilla flavour.

  3. Add the cacao powder to the remaining mixture. Mix well, then stir in the cacao nibs.

  4. Spoon the chocolate mixture into the remaining two moulds.

  5. Decorate the tops with fruit and seeds of your choice. Bow used desiccated coconut on the chocolate flavour, and pumpkin seeds with pomegranate on the vanilla flavour.

Place in the freezer until fully frozen, then enjoy.
